We at Gent Fair Trade appreciate fair food and good company, so we thought, why not combine both?

For the next 3 months, we will be bringing you delicious, easy, quick recipes and above all, using fair trade products from Oxfam Gent Centrum to cook and eat with your loved ones!

We will share our recipes and tips on our socials and this will be your chance to try to go fair trade for the summer and show your cooking skills with us!

Tiramisù is a traditional Italian dessert, but it is not as old as one might think. The origin is quite diffuse and it's full of legends, but the most solid story tells that it was popularized by a restaurant in Milan during the fifties. Another fact that we learnt is that the recipe doesn't necessarily need mascarpone, it works with any kind of creamy fresh cheese or even just with eggs.

In our recipe we include two of the most famous fair trade products, coffee and chocolate. Besides, we didn't put any liquor, but it is also really common to add amaretto or rum. Normally, the recipe counts with a kind of cookie known by ladyfingers or savoiardi. However, we decided to do it with speculoos for the extra sweet and comforting flavor.

Our tiramisu with speculoos can be made with the following ingredients

  • 3 eggs
  • 1 can of mascarpone
  • Fair trade Coffee
  • Fair trade coconut sugar
  • Fair trade speculoos
  • Fair trade cocoa powder
  • A pinch of salt


PREPARATION

  • First separate the egg yolks from the whites. We did it by helping us with the egg shelfs. Put the whites in the fridge.

  • Whisk the yolks and add sugar to taste, we put around three tablespoons of sugar.

  • Once the mix is homogeneous, add the mascarpone little by little and whisk it until having a creamy texture.

  • Here is where things get a bit tricky. You need to beat the egg whites until stiff. For that matter we recommend a mixer, but if you are patient like us, you can do it by hand. It takes around 15-20 minutes, and it is easier if you add a bit of lemon juice.

  • Once it is firm, you need to add it to the other mix with evolvent movements. Take your time and do it little by little for the optimal result.

  • The next step is making coffee. Once you have it, let it cool so then the speculoos won't disintegrate.

  • Put some coffee in a recipient and submerge the speculoos one by one. Be cautious about the time, because we don't need them to be soggy.

  • Set up the recipient where you want to set up the tiramisu and put the soaked speculoos in the first layer

  • Once you have the first layer, put some of the mascarpone mix and reserve some for another layer.

  • Repeat the process putting another layer of speculoos and another one of mascarpone on top.

  1. Finish it by sprinkling cocoa powder on it.

  2. Cover and leave it in the fridge for at least two hours.

  3. Enjoy your delicious tiramisù.

TIPS:


  • If instead of two hours, you can leave it for 3 or 5 hours, it will taste even better.

  • Make sure that you eat it in two days minimum, remember that it has raw eggs.

  • If you don't want to use eggs, it can be done with cream instead.
