We at Gent Fair Trade appreciate fair food and good company, so we thought, why not combine both?

For the next 3 months, we will be bringing you delicious, easy, quick recipes and above all, using fair trade products from Oxfam Gent Centrum to cook and eat with your loved ones!

We will share our recipes and tips on our socials and this will be your chance to try to go fair trade for the summer and show your cooking skills with us!


Chocolate avocado mousse 1

The recipe we bring to you this time is an all time favorite dessert, but with a small twist (as we like it). The chocolate mousse is a light textured, delightful taste plate. The first time that it appeared was in the 19th century by a French chef, and we have been enjoying it internationally since then.

Chocolate is one of the main focuses of fair trade organizations around the world, its production takes place in the global south, making it almost impossible to trace the conditions of the workers and the environment. This way, it is important that us consumers do some research and become more conscious about the product we are buying. Fair trade chocolate ensures the decent livelihood of all those involved in the process of making the chocolate that we all love. It is possible to enjoy our food in an ethical way and be more sympathetic with the world we live in!

The twist in our chocolate mousse is avocado, by adding it we are not only getting a creamier texture but all the good fats and nutrients that the original recipe cannot compete with.

To make the avocado mousse you will need the following ingredients.

  • 2 ripe bio avocados
  • Fair Trade cocoa powder to taste
  • 1 spoon of hazelnut spread (optional)
  • Fair Trade coconut sugar
  • 1 pinch of salt
  • A split of milk
  • 1 can of chickpeas (to make aquafaba)


The procedure is very simple but if you need some guidance, here you are!


  • Peel the avocados and put it in a container suitable to smash or blend it.

  • Add cocoa powder, the sugar, a split of milk, and a pinch of salt

  • If you want, you can add a spoon of hazelnut spread.

  • Blend it until all the ingredients come together.

  • Drain the chickpeas and save the preserving water, use a mixer to whip it and make aquafaba.

  • Add the aquafaba to the avocado chocolate mixture with evolving movements.

  • Put in the fridge for at least an hour.

  • When the mousse is ready just serve it, it is an excellent spoon dessert but also a great accompaniment to another dessert!

TIPS:


  • If you don't use the hazelnut spread and substitute the cow milk with any vegetable milk, the recipe is completely vegan.

  • You could add any toppings you like on it, like berries or speculoos.
