Fair Tasty Temptations: Veggie Hachis Parmentier

Gent Centrum to cook and eat with your loved ones!

For this week, our recipe is a vegetarian version of the Hachis Parmentier.

Hachis Parmentier is a French baked dish made of mashed potatoes and usually leftover beef stew layered together with cheese. The word "hachis" refers to a dish in which the ingredients are chopped, minced or ground.

This is what we used for 3-4 people:

  • 5 bio potatoes
  • 1 bottle of passata
  • 1 onion
  • 1 garlic
  • 1 can of jackfruit
  • 1 cup of Fair Trade red wine
  • Bio parmesan
  • Salt, pepper and origan as much as is needed

The recipe is easy, cheap and quick to prepare but the taste of the dish is our of the world!

So, let’s start cooking!

  • First things first: put some water to boil in a pot, start peeling the potatoes and as soon as the water boils throw them in.
  • Mince a clove of garlic and an onion and put them in a frying pan to be sauteed with a little oil.

  • Instead of beef, we opted for jackfruit. For this recipe, a can is enough! Smash it up a little and add it to the onions and garlic and add season to taste with salt and pepper.

The jackfruit is a delicious fruit because of its properties. It is in fact a low-fat fruit, fairly high in fibre and rich in micronutrients and vitamins. It also provides several health benefits as it has antioxidant, anti-inflammatory and anti-bacterial activity.

  • Stir it occasionally so that it does not stick to the pan and add a cup of red wine and the bottle of passata, keep stirring.

  • In the meantime, put the potatoes in a casserole dish and cover them with the jackfruit mixture and passata. We put the potatoes in slices, but you can also do it with smashed potatoes if you wish.
  • Add grated cheese on top, a couple of fresh oregano leaves and bake in a static oven at 200 ° for 15 minutes.
